Freshly harvested coffee cherries are placed in a fermentation tank to which strawberry pulp is added, and anaerobic fermentation takes place for approximately 72 hours.
The pulp is then removed, leaving a certain amount of mucilage, and the cherries are carefully dried in the sun on African beds.
In addition to the overwhelming sweetness of strawberries, this coffee has a wonderful red wine and sweet wine-like flavor from the wine yeast and a long-lasting aftertaste.

収穫したてのコーヒーチェリーを発酵タンクに入れ、そこにいちごの果肉を加え、約72時間の嫌気性発酵を行います。その後、果肉を除去しミューシレージを一定量残した状態で、アフリカンベッドの上で丁寧に天日乾燥させています。
まさにイチゴが、熟したようなイチゴの圧倒的な甘さに加え、ワイン酵母による赤ワイン、スイートワインのようなフレーバーと長く続く余韻が素晴らしいコーヒーです。
